How to make vegetarian hot dogs that look like the real thing? All you need are a handful of carrots (and a delicious marinade for grilling them). Michael Abramson's easy carrot hot dog (aka "not dog") recipe is the optical illusion your grill needed this summer.
Carrot Not Dogs From the Kitchens of YamChops
+ 5 hot dog sized carrots
+ 1 cup of water
+ 1 cup of rice vinegar
+ 1 cup of soy sauce
+ 1 cup of canola oil
+ 2 tbsp apple cider vinegar
+ ¼ tsp hickory liquid smoke
+ 4 small cloves of garlic, chopped
+ ½ tsp ginger powder
+ 1 tsp coarse grind pepper
+ ½ tsp onion powder
+ 8 vegan hot dog buns
+ Trim the tip and the tail of the carrot but do not peel them.
+ Bring a large pot of water with salt to boil and cook the carrots until soft. (15 to 17 minutes)
+ While the carrots are cooking, prepare the marinade.
+ In a large flat bowl, whisk together the water, tamari, rice vinegar, oil, cider vinegar, liquid smoke, garlic, ginger powder, pepper, and onion powder.
+ Place the carrots from the pot in the marinade. Make sure all the carrots are completely covered in marinade and place in the refrigerator for a minimum of four hours. Overnight is even better.
+ Once the carrots have marinated, remove them and place them on the grill. Frill the carrots for 1-2 minutes on each side.
+ Put them in buns and you're ready for your cookout!
